The first cut brisket, also known as the flat, is the leaner of the two brisket muscles. Trimmed clean in our shop, it's the traditional choice for Jewish holiday cooking, Texas-style low-and-slow barbecue, and classic NYC deli pastrami. Our butchers source well-marbled Black Angus briskets and trim each flat to order.

The beef chuck roast is the pot roast hero and backbone of great braises. Our chuck roast is richly marbled and full of flavor. Cut from the shoulder, it carries enough fat and collagen to become fork-tender after long, slow cooking, developing a rich, gelatinous gravy and deep beefy flavor that no other cut can replicate. Our butchers hand-cut each chuck roast from well-marbled Black Angus cattle.

Pulled from the loin, the center-cut beef tenderloin is the most tender and refined cut in the case. Sourced from the middle section of the whole tenderloin, it is prized for its uniform shape, fine grain, and buttery texture. Lean yet exceptionally tender due to minimal muscle use, it roasts evenly and slices beautifully, making it the preferred cut for filet mignon, chateaubriand, and elegant roast presentations. A staple for special occasions and steakhouse dining, it delivers a consistently luxurious eating experience. The eye round is among the leanest roasts in the case, a cylindrical muscle from the hindquarter with minimal fat and a tight grain. A New York classic. London broil is cut from the top round — a lean, large muscle from the hindquarter — and is best prepared by marinating and cooking at high heat before slicing thin against the grain. It feeds a crowd, absorbs bold flavors well, and remains one of the most satisfying weeknight roasts in the city.

One of the most tender cuts on the chuck, and one of the least known. The teres major is a small, cylindrical muscle from the shoulder that rivals the tenderloin in tenderness but carries far more flavor. A true butcher's specialty cut, available only because our team knows where to find it.

The spoon roast — also known as the top sirloin roast — gets its name from its tenderness: some say it's so tender it can be eaten with a spoon. Cut from the top of the sirloin, it offers a lean, flavorful roast that's less intimidating than a standing rib but just as satisfying. Our butchers hand-trim each one in-house.

The whole packer brisket — flat and point together — trimmed and ready for the pit or the pot. This is the foundation of great Texas barbecue and the crown of any Passover table. Our butchers trim the fat cap to the ideal thickness for smoking: enough to baste throughout the cook without becoming excessive.

The silver tip roast — cut from the shoulder clod near the neck end — is a classic New York butcher cut. Lean and fine-grained, it's been a staple of Jewish delis and family tables throughout the city for generations. Our butchers trim each one to order, removing the silver skin for clean presentation.

The NY Strip Roast is the showstopper of the holiday table. Ours is sourced from USDA Prime Black Angus cattle, the top grade awarded to fewer than 5% of all beef in the country, and hand-trimmed in our shop to leave just the right amount of fat for flavor and a stunning presentation. No guesswork, no shortcuts. Just the cut, prepared the way it should be.
This roast is built for a crowd. Plan on feeding 6–10 guests, depending on the size you select, with enough richness and marbling to satisfy even the most serious steak lover at the table.

Prime Rib – Standing Roast
The standing rib roast is the great American celebration roast. Cut from the rib primal with the bones left in and standing upright, it yields slices of extraordinary marbling and flavor — each one basted naturally by the fat cap throughout the roasting process. Our prime rib roasts are sourced from USDA Prime Black Angus and hand-trimmed in our shop.
